Early Frugality

We were still college students when we got married in the early 60s. Thus we didn’t have too much money. Rent was $70 a month, which gave us a bit left for food. Lamb ribs were only 10 cents a pound, I guess because no one knew what to do with them. (I found some on line today for $9 a pound; probably less at your corner store). So we ate a lot of lamb ribs and learned many ways to prepare them. The other bargain was carrots, very inexpensive. We made a marvelous carrot ring in a ring mold, which was a thing in that era. It used chopped carrots and onions in a custard with a white sauce and peas over the top. Very elegant but easy to make.

There are only 16 discrete carrot recipes in today’s Joy of Cooking. We add carrots to every meat stew and occasionally cook them in a little water and butter and add brown sugar. I also grate a whole carrot for every meatloaf, which I make weekly. Carrot cake is my standard for entertainment as well.

I had this carrot cake made for my giant Kossack party from 2009. I hadn’t looked at that diary for quite a while. What a trip down memory lane. Some folks have left, some folks still here...but older now. A decade takes a toll.

I used to grow carrots at my farm. They are fairly easy to grow, except for the tender-hearted, because you have to thin them and you are tearing tiny cute mini-carrots out of the ground and leaving the strongest by their lonesome. Incidentally, labels that proclaim "baby-cut carrots" appear on packages of petite carrots made by chopping down and polishing much larger versions of the vegetable. Fake news.  Here is a typical carrot, well, larger than most, that I grew.

Well, that’s probably more than anyone wanted to hear about carrots. But what did y’all do to stretch your food dollar when you were young and penniless? I imagine many folks ate Top Ramen. I was so poor I could only afford Bottom Ramen.
